Pear, Chia & Maple Loaf Cake

This lovely little cake is everything you want in a loaf cake.

Sweet, fluffy, moist, light and utterly delicious.

PLUS it is the simplest, easiest thing in the world to whip up anytime you just want that something sweet and you want it NOW!

I whipped this one up for the first time on the day I have at home with my baby girl.
We love to spend the afternoon baking something delicious and this recipe was absolutely perfect for that.

Using the soft ripe pears which are so easy for a little one to cut on their own then the pure joy of the mess and fun created when little hands mix the flour and all the wet ingredients.

All in all this cake has been a big hit in our house and I hope it will be in yours too.

INGREDIENTS(Yields 8 Slices)

  • 200g Spelt Flour
  • 80g Ground Almonds
  • (For GF – 100g Coconut Flour, 180g Ground Almonds)
  • 30g Chia Seeds
  • 2 Tsp Baking Powder
    1 Pinch of Salt
    1/4 Tsp Cinnamon
    1 Vanilla Pod (scraped)
    300g Fresh Pear (peeled and cut into cubes)
    3 Slices of Pear (cut thinly trough the whole pear)
    100ml  Coconut Oil
    70ml Almond Milk (can be any non-dairy milk)
    150ml Brown Rice Syrup
    70ml Maple Syrup


– Pre-heat the oven to 180 degrees C
– First cut your three thin slices of pear and leave them to the side
– Then peel and cut the rest of your pear into cubes and add to a medium mixing bowl.  Add the cinnamon and all the wet ingredients and the chia seeds.  Mix together really well
– Add your dry ingredients to a large mixing bowl and mix together then add your wet ingredients to the dry
– Mix together gently and pour into a lined loaf tin
– Place your three pare slices on the top for decoration and bake in the oven for 35-40min or until golden on top
– Leave to cool for 10min and enjoy with plenty of oat or cashew cream
