Apple & Granola Drizzle Cake

Wow! Just wow!  This recipe was a compete experiment and it turned out utterly delicious.

Ok, if i’m totally honest it was made out of a desperation for comfort and cake and all I had in the house were apples and some of my home-made Vanilla Maple Granola.  Yup, you know how it goes, when it’s raining outside, you’ve got that craving for cake and you’ll do anything you can to eat some!

INGREDIENTS
(Serves 12)

  • 240g Spelt Flour (If you need gluten free I think Chestnut Flour works really well here)
  • 1 1/2 Tbls Baking Powder
  • 120g Vanilla Maple Granola – or any SF Granola
  • 1 Tsp Cinnamon
  • 1/4 Tsp Sea Salt
  • 60ml Olive Oil
  • 120ml Brown Rice Syrup
  • 1 Tbls Milled Chia Seeds mixed in 2Tbls Water
  • 120ml Maple Syrup
  • 160ml Unsweetened Apple Juice
  • 2 Tsp Vanilla Powder or Essence
  • 300g Raisins
  • 2 Eating Apples
  • Brown Rice Syrup or Maple Syrup to drizzle over the top

Method:

– Pre-heat oven to 180degrees C
– Sift flour into a mixing bowl and add all dry ingredients (except granola & raisins)
– Mix wet ingredients together really well (except the apples)
– Peel the apple, remove the seeds and slice them into nice thin moon slices
– Mix wet ingredients with the dry and mix to get out any extra lumps but don’t over mix
– Mix in the granola and raisins
– Oil the sides and bottom surface of a 6inch or 9inch cake tin and pour half the batter in
– Then do a layer of apple slices
– Then pour in the rest of the batter to completely cover the apples
– Layer the remainder of the apple moons in a concentric circle all the way around the top of the cake so that it is fully covered
– With a pastry brush lightly brush the top layer of apples with olive oil
– Put cake in the oven to bake for 30-40min or until you can put a knife through the middle and it comes out clean. Check after 30min first as each oven is different
– Once done take out and leave to cool for at least 20min
– Once cool place it on a cake stand or wherever you want to keep it and drizzle maple syrup or rice syrup over the top and sprinkle a little extra granola
