Smashed Blueberry & Chia Overnight Oats with Raspberry Coulis

Such a delicious breakfast and perfect for when it’s just starting to get a little colder. When it’s not quite warm enough anymore for smoothies and granola but I’m not quite ready for porridge all the time. Also it is so easy to put together and absolutely delicious! Most of the work is happening while we’re sleeping!

INGREDIENTS
(Serves 5)

  • 280g Oats (Get GF if needed)
  • 80g Chia Seeds
  • 900ml Unsweetened Brown Rice Milk or Almond Milk
  • 380g Blueberries
  • 1 Grated Apple (Peeled & Cored)
  • 3 Tbls Brown Rice Syrup
  • 1 Pinch Sea Salt
  • 1 Tsp Vanilla Essence or Powder
  • 1 Pinch Cinnamon

Sauce

  • 1 Punnet Raspberries
  • 60ml Apple Juice
  • 1 Pinch Sea Salt
  • 1 Tbls Brown Rice Syrup

Method:

– Put all dry ingredients in a medium mixing bowl.
– In a small bowl or on the chopping board smash the blueberries with a fork and add them to the mixing bowl. Grate the apple and add to the bowl.
– Add the remaining ingredients and mix very well.
– Cover with some cling film and put in the fridge or leave out on the counter (as long as it is cool enough in your kitchen) overnight.
– In a small pot add all ingredients for the sauce and bring to a boil then turn down to low heat and simmer for 5min. Cooking it for even this short of time will make the raspberries much much sweeter.
– Then blend the sauce and leave put aside in an airtight container. Then head off to bed!
– The next morning when you’re ready for breakfast serve the overnight chia oats with the sauce on top, some fresh berries and some delicious shavings of raw chocolate, or cocoa powder or whatever you fancy!!
