Muesli Breakfast Cookies

These cookies are an absolute favourite of mine. There’s really nothing better then the smell that wafts from the oven whilst baking them. The ultimate comforting heart warming factor followed by seeing the cookie jar filled to the brim with all this scrummy yumminess.

In this recipe I use a combination of raisins, coconut and oats but once you get the foundations down please experiment with different combinations.  I’ve tried it with cranberries, sugar-free chocolate chips, nuts, seeds, chia seeds, dried apple…. the list goes on.  Play around and have fun, because that’s what desserts are all about!


(Makes 12)

  • 60g Wholewheat, White GF Flour or Rice Flour
  • 30g Spelt Flour
  • 210g GF Oats or Regular Oats
  • ½ Tsp Baking Powder
  • ½ Tsp Cinnamon
  • 115g Raisins
  • 50g Dessicated Coconut
  • 55ml Brown Rice Syrup
  • 55ml Maple Syrup (Can just use Rice Syrup only if needing to cut down sugar content)
  • 55ml Coconut Oil
  • 55ml Soy, Rice or Oat Milk
  • 1 Tbls Ground Almonds
  • ½ Tsp Sea Salt


– Pre-heat oven to 180degrees C
– Mix all wet ingredients separately. Whisk/mix very well
– Put all dry ingredients in a large bowl except for oats, raisins & coconut, and slowly mix in the wet ingredients. Mix slowly until well combined
– Then add oats, raisins & Coconut. Mix in and combine well
– Cover the bowl and put in the fridge to sit for 20minutes to allow the oats to absorb all the liquid and expand
– After 20min take out and on a baking tray with baking paper, put tablespoon size dollops 2 inches apart. Or if for breakfast make them bigger sized, almost like scones
– Put in the oven to bake for 15-20min or until golden brown and crisp round the edges. Leave to cool for 2-3minutes
– If you need to keep doing more rounds then carry on until all the mixture is used up

Voila! Enjoy with a good pouring of Vanilla Cashew Cream or straight out the oven. xxxx
